Brian was the founding Chef of restaurant Kisses for Kaos in Melbourne. The restaurant was modelled after an 1890’s New Orleans dining room. Entirely Creole and Cajun cuisine where everything was produced in house from sausage, spice mixes, hot sauces through preserves and boudin. With influences from France, Spain and indigenous America that was later enriched by West African, German and Italian settlement. A unique cuisine and food style that is rich, rewarding and surprising technical.
